CHICKEN WITH A HERB AND PARMESAN CRUST

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Preheat the oven to 180°C / 350°F / Gas Mark 4.
  • Place the chicken breasts in a non-metallic ovenproof dish. Pour over the stock. Cover and cook for 20 minutes or until cooked through. Drain off the stock.
  • Mix together the pesto and half the breadcrumbs. Spoon this mixture over each chicken breast.
  • Combine the remaining breadcrumbs with the parmesan and sprinkle over the pesto-topped chicken, press down lightly.
  • Return the chicken to the oven and continue to cook for 10 minutes or until the top is golden.

INGREDIENTS

  • 750 grams medium boneless, skinless chicken breasts
  • 100 ml chicken stock
  • 75 grams fresh Granary breadcrumbs
  • 2 tablespoons pesto
  • 25 grams grated parmesan
