PARCHED MORNING GLORY CURRY

Preparation Method :

  • Cover the fish in wheat flour and fry in hot oil (set to medium heat) until golden yellow. Remove and set aside to drain oil.
  • Stir-fry the chili curry paste with oil until aromatic then season with fish sauce and palm sugar.
  • Add the cereal cream followed by water. Once boiled, add the morning glory and bring back to the boil again before adding the fried fish. Stir the contents together gently.
  • Add the kaffir lime leaves and cayenne pepper.
  • Blend together gently and taste. Serve immediately.

INGREDIENTS

  • 200 grams Sea bass meat, cut into bite-sized pieces
  • 600 grams Morning glory, cut into 1 inch stems
  • 50 grams Chili curry paste
  • 3 tablespoon Fish sauce
  • 2 tablespoon Palm sugar
  • 100 ml Water
  • 400 grams Cereal cream
  • 3 leaves Kaffir lime leaves
  • 1 piece of each Green, red and yellow cayenne pepper, diagonally sliced
  • 50 grams Wheat flour
  • IDHAYAM Sesmae oil for stir-frying
  • IDHAYAM Mantra Peanut oil for frying
