PRAWNS IN GREEN CURRY PASTE

The green colour is derived from the green chillies used in the paste. This is a relatively easy curry to prepare.
Serves :

Preparation Time :
10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Simmer the green curry paste in half the coconut milk for 5 minutes.
  • Add the prawns, stirring occasionally until they are cooked.
  • Add the remaining coconut milk and simmer, uncovered, for an additional 10 minutes.
  • Garnish with the onions.
  • Serve over rice.

 

INGREDIENTS

  • 4 tablespoons Green Curry Paste
  • 250 ml coconut milk
  • 1 kg prawns, peeled and de-veined
  • Small bunch spring onions, chopped (including green parts)
