Preparation Method :

  • Grill the damsel fish on low heat until cooked golden yellow and dry. Set aside to cool and extract only the meat. Set aside.
  • Bring water to the boil then add the shallots, galangal, lemongrass and kaffir lime leaves. Bring to the boil again then add the damsel fish meat.
  • Season with tamarind juice and fish sauce. Add crushed chilies and dried bird chili before removing from heat. Place in a bowl containing young tamarind leaves and serve while hot.



  • 3 Dried damsel fish
  • 400 grams Young tamarind leaves    
  • 4 pieces Crushed shallots    
  • 6 slices ripe galangal, sliced and lighted crushed    
  • 2 stems Lemongrass, cut into pieces and slightly crushed
  • 3 leaves Kaffir lime leaves, slivered    
  • 1000 ml Water    
  • 7 tablespoon Tamarind juice    
  • 7 tablespoon Fish sauce    
  • 9 bird chilies, crushed
  • Roasted dried bird chili, quantity as desired
