Preparation Method :

  • Roast the dried cayenne peppers with dried bird chilies over low heat until aromatic. Set aside.
  • Roast the garlic and shallots until aromatic then set aside.
  • Pound the dried cayenne peppers, dried bird chilies and salt together until smooth. Add the garlic and shallots to pound together until smooth then follow with the fish meat.
  • Season with palm sugar, fish sauce and tamarind juice. Stir-fry the contents with oil until aromatic. Spoon the contents into a bowl and serve with assorted fresh vegetables  



  • 2 Catfish, filleted and meat cut into small pieces
  • 15 Dried cayenne peppers, cut into pieces        
  • 9 Dried bird chili        
  • 50 grams Garlic, coarsely cut    
  • 50 grams Shallots, coarsely cut
  • 1 teaspoon Ground salt    
  • 1 tablespoon Palm sugar    
  • 6 tablespoon Fish sauce
  • 6 tablespoon Tamarind juice
  • 3 tablespoon IDHAYAM Mantra Peanut oil 
  • Assorted vegetables as desired
