Preparation Method :

For chili paste

  • Crush all the ingredients together until smooth this will yield approximately ¼ cup of chili curry paste.

For Grilled Fish in Sweet Vegetable Curry

  • Bring water to boil then add the chili curry paste and stir contents together. Bring to the boil again then add the fish meat.
  • Season with fish sauce and fermented fish soup then add the currant tomato juice, vermicelli noodles and sweet vegetables. Bring to the boil again.
  • Remove from heat and serve immediately.


For chili paste

  • 5 pieces dried cayenne pepper, cut into pieces and soaked in water
  • 5 pieces Garlic    
  • 3 pieces Shallots    
  • 1 teaspoon Charred shrimp paste
  • ¼ teaspoon Ground salt

For Grilled Fish in Sweet Vegetable Curry

  • 250 grams striped snake-head fish, extract only the meat
  • 800 grams Sweet vegetables, cut into short pieces
  • 200 grams Vermicelli noodles, cut into short strands and soaked in water
  • 100 ml Currant tomato juice
  • 2 tablespoon Fish sauce
  • 3 tablespoon Fermented fish soup, boiled
  • 100 grams Chili curry paste
  • 800 ml Water
