Preparation Method :


For curry paste

  • Blend all the contents together and set aside.

For Spicy herbal stir-fried fish

  • Fry the fish in hot oil (set to medium heat) until golden yellow then set aside to drain oil.
  • Stir-fry the curry paste with oyster sauce until aromatic.
  • Season with fish sauce and brown sugar, then add water and gently blend together.
  • Add the fried pieces of fish and stir-fry the contents together then add the green peppercorn, finger roots, sweet basil leaves and cayenne pepper.
  • Stir-fry the contents together again and place onto a serving dish. Serve immediately.



For curry paste

  • 6 large red bird chilies
  • 3 teaspoon Galangal, finely slivered 
  • 2 tablespoon Finger roots, finely slivered 
  • 2 tablespoon Garlic, finely slivered

For Spicy herbal stir-fried fish

  • 500 grams Bite-sized pieces of sole 
  • 5 stems Young green peppercorn 
  • 1 tablespoon Finger roots, sliced in shreds 
  • 200 grams Sweet basil
  • 1 - 2 pieces Red cayenne peppers, diagonally sliced 
  • 3 teaspoon Fish sauce
  • 2 teaspoon Brown sugar
  • 250 ml Water 
  • 250 grams Curry paste
  • 1-2 tablespoon IDHAYAM Sesame oil for stir-frying
  • IDHAYAM Mantra Peanut oil for frying
