Preparation Method :

  • Mix the pieces of fish with salt and set aside for 10 minutes then fry in hot oil (set to medium heat) until golden yellow. Remove and set aside.
  • Mix the palm sugar with the tamarind juice, fish sauce and water and simmer over low heat until thickened.
  • Add the fish and mix with the tamarind sauce. Remove and place on a serving dish, then garnish with fried shallots, garlic and chili.


  • 300 grams Sea bass fillets, cut into bite-sized pieces 
  • 50grams Palm sugar 
  • 5 tablespoon Tamarind juice 
  • 1 teaspoon Ground salt
  • 4 tablespoon Fish sauce 
  • 50 ml Water 
  • 50 grams Shallots, fried
  • 3 tablespoon Garlic, fried 
  • 10-15 dried bird chili, fried crispy 
  • IDHAYAM Mantra Peanut oil for frying
