PRAWN AND CHILI PASTE FRIED RICE

Preparation Method :

  • Thoroughly mash the chillies and garlic in a mortar.
  • Add the shrimp paste and mix well. Add the sugar and lime juice and mix everything together well.
  • Adjust the seasoning to obtain a powerful taste.
  • Wash and shell the prawns, remove the forward portion of the body, but leave the tail fins attached.
  • Cut them open down the back and remove the black vein, and then cut into large pieces.
  • Mix the rice and the chilli paste thoroughly and set aside.
  • Heat the oil in a wok. When it is hot, stir fry the prawns until done.
  • Add the rice-chilli paste mixture, continue stir frying until the rice is ready and then turn off the heat.
  • Put the fried rice in the middle of a plate, arrange the fried dried shrimp, omelette strips, shredded mango, and shallot slices around it.
  • serve with spring onions and sliced cucumber.

INGREDIENTS

  • 500 grams cooked rice
  • 4 tablespoons chili paste
  • 6 tiger prawns or white prawns
  • 4 tablespoons fried dried shrimp
  • 100 grams thin strips of omelette
  • 100 grams shredded green mange
  • 8 shallots cut into slices
  • 2 cucumbers
  • 4 spring shallots
  • 2 tablespoons coriander leaves,
  • 4 hot chillies
  • 5 tablespoons Cooking oil

Chili Paste

  • 10 hot chillies
  • 8 garlic cloves,
  • 2 teaspoons sugar
  • 6 tablespoons lime juice,
  • 1 tablespoon shrimp paste
