PRAWN AND HOLY BASIL FRIED RICE

- Wash the prawns thoroughly, shell tem leaving the tail fins in place, cut them open along the back, and remove the vein
- Heat the oil in a wok. When it is hot, fry the hot chillies and garlic until fragrant. Next, add the prawns and stir-fry.
- Season with the sugar, soy sauce, and fish sauce, stir to mix well, put in the holy basil.
- Stir-fry a short time, and then add the rice and continue stir-frying until everything is ready.
- Transfer onto a bed of lettuce arranged on a plate, garnish with the sliced red spur chilli carrot.
- serve with sliced cucumber.
INGREDIENTS
- 500 grams cooked rice
- 8 tiger or white prawns
- 200 grams sprigs of holy basil
- 2 teaspoons chopped hot chillies
- 2 cucumbers
- 2 teaspoons thinly sliced red spur chilli
- 2 teaspoons chopped garlic
- 1 teaspoon sugar
- 2 teaspoons dark soy sauce
- 1 tablespoon fish sauce
- 5 tablespoons Cooking oil
- Lettuce and carrot for garnish
