Preparation Method :

  • Coarsely mash hard tofu and leave to dry slightly.
  • Fry in hot oil over medium heat until golden and crispy. Remove and drain on absorbent paper.
  • Wash the kales, discard tough green skin and diagonally slice the stems. Cut the leaves into 1" pieces and put aside.
  • Separate rice noodles evenly and put aside.
  • Drain off the oil in the frying pan. Place the pan over medium heat until the oil is hot.
  • Sauté chopped garlic until fragrant, add pickled garlic, fermented tofu and dark fermented soybean, followed with rice noodles.
  • Stir-fry and toss to combine. Season with sweet dark soy sauce and sugar.
  • Add in kales and cauliflower. Cook until everything is done, turn off the heat.
  • Transfer to a serving dish, sprinkle fried tofu on top and garnish with blanched kale tip.
  • Serve at once.


  • 1 piece hard white tofu
  • 500 ml Cooking oil
  • 4 kales, large-sized
  • 500 grams flat rice noodles
  • 1 tablespoon chopped garlic
  • 4 bulbs pickled garlics, thinly sliced
  • 4 tablespoons mashed yellow fermented tofu with its liquid
  • 2 tablespoons dark fermented soybean
  • 1 teaspoon sweet dark soy sauce
  • 2 teaspoons unbleached sugar
  • 200 grams cauliflower, cut into florets blanched kale tip for garnish
