- Heat the oil in a frying-pan and add the onion, garlic and mushrooms. Fry for about 2 minutes or until the onion is softened and the mushrooms are cooked.
- Add the sun-dried tomato paste, chopped tomatoes and rosemary to the onion mixture, bring to the boil, cover and cook for 5 minutes.
- Stir in the cheese and adjust seasoning with salt and pepper. Toss the cooked pasta with sauce and serve hot.

- 300 grams dried pasta shapes, cooked
- 150 grams button mushrooms, quartered
- 450 grams chopped tomatoes
- 1 teaspoon Cooking Oil
- 100 grams ricotta cheese
- 75 grams onion, chopped finely
- 2 garlic cloves, crushed
- 50 grams sun-dried tomato paste
- 1 teaspoon dried rosemary
- Salt and freshly ground black pepper, to taste
