PORK WITH MUSHROOM, MUSTARD AND TARRAGON SAUCE

Preparation Time :
20 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Season the pork with salt and pepper for about 5 minutes.
  • Heat the oil in a frying-pan. Fry the pork steaks for 3 minutes on each side or until browned and cooked. Remove from the pan and keep warm.
  • Add the onion and mushrooms to the pan and fry for 5 minutes or until softened.
  • Pour over the wine, allow to boil on low flame till it reduces to half. Stir in the mustard, crème fraiche and tarragon. Season well.
  • Return the pork steaks to the pan with juices. Bring to the boil and serve.

INGREDIENTS

  • 500 grams medium lean pork steaks 
  • 225 grams mixed mushrooms, sliced 
  • 100 grams half-fat crème fraiche
  • 100 ml dry white wine 
  • 1 onion, finely chopped 
  • 2 teaspoons Cooking oil
  • 1 tablespoon whole-grain mustard
  • 2 teaspoons dried tarragon
  • Salt and freshly ground black pepper, to taste
