Preparation Method :

  • Boil the vegetable stock in a pan, remove from heat and add the couscous. Cover and set it aside for 5 minutes or until tender. Remove any lumps.
  • Heat half of the oil in a separate pan and fry the pork for 3 - 5 minutes on each side or until browned and cooked through.
  • Heat the remaining oil in a frying-pan, add the onion and fry for about 2 minutes or until softened. Stir in the spices and cook for another 1 minute.
  • Stir the couscous, prunes, apricots and coriander together with the onion and spice mixture. Serve with the pork.


  • 500 grams pork tenderloin, sliced
  • 500 ml vegetable stock 
  • 225 grams couscous 
  • 2 teaspoons Cooking oil
  • 1 onion, chopped 
  • 1 teaspoon ground cumin 
  • 45 grams ready-to-eat dried prunes, chopped
  • 1 teaspoon ground coriander 
  • ½ teaspoon chili powder 
  • 45 grams ready-to-eat dried apricots, chopped
  • 25 grams chopped fresh coriander
