RICE SEASONED WITH VEGETARIAN SHRIMP PASTE

Preparation Method :

  • To prepare sweet tofu: fry shallot in oil over medium heat until golden and fragrant.
  • Add tofu and toss well. Add light soy sauce, sweet dark soy sauce and palm sugar, toss to coat.
  • Add in water and cook until the sauce reduces and the tofu becomes shiny.
  • To prepare seasoned fried tofu: toss tofu and light soy sauce together.
  • Fry tofu in hot oil over high heat for a few minutes.
  • Reduce to medium heat and cook until no bubble remains and the tofu is golden crispy. Remove and drain.
  • Drain away the oil in the frying pan and leave in the pan.
  • Fry chopped garlic over medium heat until golden and fragrant.
  • Combine olive and water together and add sugar. Reduce to low heat, add cooked rice and toss well. Dip out into a bowl.
  • In another pan, add oil and place over low heat.
  • Swirl the pan to coat, pour beaten egg and swirl to form a thin round sheet.
  • When it is done, remove from the pan. Roll the omelette and cut across into thin strips.
  • Ladle shrimp paste rice onto a serving dish, arrange omelette strips, sweet tofu, seasoned fried tofu, green mango, and sliced shallot on the sides.
  • Garnish with coriander leaves and hot chili.
  • Serve with fresh vegetables.

INGREDIENTS

  • 200 grams hard white tofu, mashed
  • 4 teaspoons light soy sauce
  • 300 ml Cooking oil
  • 2 tablespoon garlic, chopped
  • 2 tablespoons fermented tofu, finely mashed
  • 2 tablespoons pickled Chinese olive, finely mashed 
  • 2 tablespoons water 
  • 2 teaspoons sugar
  • 300 grams cooked brown rice
  • 2 eggs, lightly beaten
  • 100 grams green mango, shredded
  • 5 tablespoons shallot, sliced
  • Coriander leaves and hot chili slices for garnish 
  • Fresh vegetables: lime wedges and spring onion

Sweet tofu

  • 2 tablespoons shallot, chopped
  • 4 tablespoons Cooking oil
  • 300 grams hard white tofu, diced and diced and fried until golden
  • 2 tablespoons light soy sauce
  • 2 teaspoons sweet dark soy sauce
  • 4 tablespoons palm sugar
  • 100 ml water
