SEAFOOD WITH CHILIES

Preparation Method :

  • Heat the oil in a nonstick wok or frying pan and stir - fry the garlic over medium heat until it is lightly browned.
  • Add the red pepper, onion and carrot and stir - fry for 2 minutes.
  • Add all the seafood together with the ginger, stock, oyster sauce and soy sauce and stir - fry for 2 - 3 minutes or until the prawns turn pink and all the seafood is cooked.
  • Add the chili and spring onions and mix well together.
  • Spoon on to a serving plate and serve immediately.

INGREDIENTS

  • 3 tablespoons IDHAYAM sesame oil
  • 6 garlic cloves, finely chopped
  • 250 grams red pepper, deseeded and cut into bite sized pieces
  • 2 small onions cut into eighths
  • 2 carrots cut into matchsticks
  • 750 grams prepared mixed seafood, such as prawns, squid, and small scallops
  • Piece of fresh root ginger, peeled and finely shredded
  • 4 tablespoons vegetable or seafood stock
  • 2 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 2 long red chilis, stemmed, deseeded and sliced diagonally
  • 4 spring onions, finely sliced
