Preparation Method :

For curry paste

  • Crush all the ingredients together and place in a bowl. Set aside.

For Spicy mixed vegetable curry

  • Dissolve the curry paste mixture with water then bring to the boil.
  • Add the shrimp followed by pumpkins, young corn, sponge gourd and straw mushrooms.
  • Season with fish sauce and palm sugar then stir together gently.
  • Add the ivy gourd leaves and hairy basil leaves then gently stir together. Wait for the contents to boil again then place in a bowl. Serve immediately.



For curry paste

  • 200 grams Medium-sized fresh shrimps, peeled and deveined    
  • 1 tablespoon High quality shrimp paste    
  • 9-11 pieces Bird chili
  • 50 grams Shallots, coarsely chopped
  • ½ teaspoon Whole peppercorns
  • 100 grams Straw mushrooms, cut into 4 pieces
  • 100 grams gourd leaves
  • 100 grams Hairy basil leaves
  • 1-2 teaspoon Brown sugar
  • 2 tablespoon Fish sauce
  •  2 tablespoon Water
  • 400 grams Curry paste mixture

For Spicy mixed vegetable curry

  • 5-6 Medium-sized fresh shrimps, peeled and deveined
  • 200 grams Sponge gourd, diagonally sliced
  • 100 grams Pumpkin, cut into bite-sized pieces
  • 100 grams Young corn, diagonally sliced
