Preparation Method :

  • To prepare spicy chili mixture: pound dried hot chilies and large hot chilies together well.
  • Add pepper, galangal, coriander root, kaffir lime rind and garlic. Pound to obtain a smooth paste.
  • Cut away the hard part of enoki mushrooms about 2 cm from the base, clean with a piece of cloth and put aside.
  • Place a pan of oil over high heat until the oil is hot. Sauté chili mixture until fragrant.
  • Add in stock and enoki mushrooms. Stir-fry quickly until done.
  • Season to taste with light soy sauce and sugar.
  • Add green peppercorn, stir to mix well and remove from the heat.
  • Dip out into a serving dish and garnish with green peppercorn sprig.
  • Hot chili and kaffir lime leaves before serving.


  • 350 grams enoki mushrooms
  • 4 tablespoons Cooking oil
  • 75 grams spicy chili mixture
  • 150 ml vegetable stock
  • 3 tablespoons light soy sauce
  • 1 teaspoon palm sugar
  • 3 tablespoons green peppercorn, cracked
  • Green peppercorn sprig, red hot chili and kaffir lime leaves for garnish

Spicy chili mixture

  • 15 dried hot chilies
  • 3 large red hot chilies
  • 1 teaspoon black pepper
  • 3 teaspoons mature galangal, finely sliced
  • 1 tablespoon coriander root, sliced
  • 1 teaspoon kaffir lime rind, finely sliced
  • 3 tablespoons small Thai garlic
