Preparation Method :

  • Wash chayote well and drain.
  • Place a work of oil over high heat until the oil is very hot.
  • Add garlic and hot chilies, stir quickly.
  • Add in chayote, season with light soy sauce, oyster sauce, sugar and add some water or stock.
  • Stir-fry quickly and remove from the heat.
  • Transfer to a serving dish, sprinkle fried garlic over the top.
  • Serve hot.


  • 200 grams chayote, cut into sections about 5 - 6" from the tip
  • 5 tablespoons Cooking oil
  • 10 cloves Thai garlic, peeled and crushed
  • 15 red and green hot chilies, bruised
  • 3 tablespoons light soy sauce
  • 3 tablespoons vegetarian oyster sauce
  • 2 teaspoons sugar
  • 100 ml water or vegetable stock
  • 2 teaspoons fried garlic
