Preparation Method :

  • Preheat a pan of oil over medium heat. When the oil is hot, fry chopped garlic until golden and fragrant.
  • Add fried tofu and green eggplant, toss to combine.
  • Add stock and cook until the eggplant is done.
  • Season to taste with fermented soybean, light soy sauce and sugar.
  • Cook for a few minutes, add spur chili strips and sweet basil leaves.
  • Toss well and turn off the heat.
  • Ladle into a serving dish garnish with sweet basil sprig.


  • 5 tablespoons Cooking oil
  • 2 tablespoons garlic, chopped
  • 200 grams hard white tofu, mashed and fried until just golden
  • 2 long green eggplant, cut diagonally and soaked in light salted water
  • 100 ml vegetable stock
  • 2 tablespoons dark fermented soybean
  • 2 teaspoons light soy sauce
  • 3 teaspoons sugar
  • 2 red spur chili, cut into strips
  • 200 grams sweet basil leaves sweet basil sprig for garnish
