STEAMED TOFU AND MUSHROOMS IN SOY SAUCE

Serves :

Preparation Time :
30 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Bring a pot of water to the boil over high heat.
  • Add tofu and boil until cooked through and floated to the surface. Remove and put aside.
  • To prepare the sauce: combine all ingredients together and put aside.
  • Cut the tofu to obtain ½ - 1" cubes and arrange on a plate.
  • Top with all mushrooms and spoon the sauce over.
  • Place in a steamer and steam over high heat for 2 minutes or until the mushrooms are done. Remove from the heat.
  • Garnish with Chinese celery and red spur chili best when serve hot.

INGREDIENTS

  • 4 pieces soft white tofu
  • 6 fresh shiitake mushrooms, score the caps lightly
  • 50 grams black shiimeji mushrooms
  • 4 eryngii mushrooms
  • 50 grams enoki mushrooms
  • Chinese celery leaves and stalks, red spur chili strips

The sauce

  • 2 tablespoons chopped garlic
  • 1 teaspoon cracked black pepper
  • 100 ml vegetable stock
  • 1 teaspoon unbleached sugar
  • 2 tablespoons light soy sauce
  • 2 teaspoons seasoning sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons Cooking Oil
  • 1 teaspoon Chinese rice wine
