Preparation Method :

  • Add little oil and the spice paste fry till a fine aroma rises. Mix in a cup water and allow it to boil.
  • Add the fried bitter gourd pieces, mustard leaves, soya sauce and mushrooms.
  • Adjust seasoning with palm sugar and salt. Boil to till the gravy thickens. Serve with plain rice.


  • 350 grams bitter gourd, cut circular pieces, deep fry till crispy
  • 250 grams button mushrooms - cut into slices
  • 250 grams mustard leaves
  • 1 tablespoon soya sauce
  • 1 teaspoon palm sugar
  • Cooking Oil for frying
  • Salt to taste

The Paste Pounded

  • 3 pods garlic
  • 7 coriander roots
  • 2 teaspoons pepper
  • 30 grams fermented soya beans
