CRISPY FRIED VEGETABLES

Preparation Time :
15 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Sprinkle salt and the spice mixture on the vegetables and keep aside for about 10 - 15 minutes.
  • The Batter: Mix all the ingredients together with little water if needed to make the batter smooth and has a flowing consistency.
  • Divide the batter into four portions reserve each portion for a different vegetable.
  • Heat the oil for deep frying pan. Fry each kind of vegetable separately.
  • Dip the vegetable strips a few at a time in the batter and fry in batches, till crispy and golden brown. Serve hot.

INGREDIENTS

  • 220 grams pumpkin cut into strips
  • 220 grams potatoes cut into strips
  • 200 grams beans cut into one-inch pieces
  • 150 grams button mushrooms

The Batter

  • 400 ml coconut milk
  • 90 grams rice flour
  • 90 grams wheat flour

The Spice Mixture Pounded

  • 4 dried chillies
  • 4 pods garlic
  • 50 grams onion
  • Cooking Oil for deep frying
  • Salt to taste
