Preparation Method :

  • To prepare the dressing : combine roasted chili paste, light soy sauce, lime juice and sugar in a sauce bowl, stir until sugar has all dissolved.
  • Taste and adjust to your liking. Add chilies, stir to mix well. Put aside.
  • To prepare the batter: in a mixing bowl, whisk egg with water until fluffy.
  • Store in a freezer until icy cold. Take out of the freezer and add tempura flour, all purpose flour, rice flour and baking powder.
  • With a whisk, combine the mixture to obtain a smooth and slightly thick batter.
  • Place a frying pan of oil over medium heat. When the oil is very hot, dip water morning glory in the batter and deep fry until crispy and lightly golden.
  • Remove and drain. Deep fry ivy gourd and red onion in the same way. Continue until finished.
  • Arrange crisp-fried vegetables on a serving dish, spoon the roasted chili dressing over just before serving.
  • Toss lightly and serve at once. 


  • 1 liter Cooking oil
  • 4 bunches water morning glory, cut into 2" sections
  • 4 bunch ivy gourds, leaves only
  • 4 red onions, thinly sliced

The batter

  • 2 eggs
  • 500 ml water
  • 200 grams tempura flour
  • 100 grams all purpose flour
  • 100 grams rice flour
  • 2 teaspoons baking powder

Roasted chili dressing

  • 2 tablespoon vegetarian roasted chili paste
  • 2 tablespoon light soy sauce
  • 3 tablespoon lime juice
  • 1 teaspoon sugar
  • 12 hot chilies, crushed
