GREEN MANGO SALAD WITH MUSHROOM TEMPURA

Preparation Method :

  • To prepare mushroom tempura: air-dry angel mushrooms until they are slightly dry.
  • Mix tempura flour with clear lime liquid in a mixing bowl. Add white sesame seeds and season with salt and black pepper.
  • Dip angel mushrooms into the batter and deep-fry in hot oil over medium heat until golden and crispy. Remove serving.
  • To prepare spicy dressing: combine all ingredients together. Add ground peanut just before serving.
  • Put all kinds of vegetables in a refrigerator until icy cold.
  • To serve, arrange them attractively on a serving dish.
  • Serve with spicy dressing and mushroom tempura.

INGREDIENTS

  • 200 grams green mango, shredded
  • 200 grams carrot, shredded
  • 200 grams red cabbage, shredded
  • 100 grams pea sprouts angel mushroom tempura as desired

Angel mushroom tempura

  • 300 grams angel mushrooms, torn
  • 200 grams tempura flour
  • 200 grams icy cold clear lime liquid
  • 2 tablespoons white sesame seeds
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 liter Cooking oil

Spicy dressing 

  • 10 green and red hot chilies, coarsely chopped
  • 4 dried hot chilies, pounded
  • 4 teaspoons palm sugar
  • 5 tablespoons light soy sauce
  • 4 tablespoons lime juice
  • 4 tablespoons tamarind juice
  • 4 tablespoons coconut cream
  • 5 tablespoons roasted peanut, ground
