The Pomelo Salad is a great mixture of vegetables and fruit. Light and refreshing, it makes even the salad feel lighter. Smaller portions for a starter or larger portions for a dish this salad will cover it all.
Serves :

Preparation Time :
8 minutes

Preparation Method :

  • Slice a circular patch off the top of the Pomelos or Grapefruits, about 2 cm (¾ inch) deep (roughly the thickness of the skin). Next, score six deep lines from top to bottom, dividing the skin in six segments. Peel away each piece of skin. Remove any remaining and separate the segments of the fruit. Halve each segment.
  • Place all of the ingredients in a bowl and mix it thoroughly before serving.
  • For Pomelo & Chicken Salad, mix all of the ingredients together with 200 g (7 oz) of Cooked Chicken, cut into long strips, and add 1 tablespoon of Toasted Desiccated Coconut.
  • Sprinkle a handful of fresh Coriander Leaves over the salad before serving.


  • 2 Pomelos or 2 Grapefruits
  • 4 Sliced Shallots
  • 1 Teaspoon of crushed Chillies
  • 2 Teaspoons of Sugar
  • 1 Tablespoon of Fish Sauce or Light Soy Sauce
  • 3 Tablespoons of Lime or Lemon Juice
