Preparation Method :

  • Cut off the Chinese kale branch tips and separate. Peel the skin off the stems and cut into 1 inch pieces then split in half. Set aside in the refrigerator.
  • Scald the shrimps in boiling water until cooked. Remove and set aside to drain water.
  • Mix the fish sauce, lemon juice and sugar together. Stir until the sugar is dissolved then add the garlic and bird chili. Gently blend the contents together.
  •  Add the minced shrimp and fresh shrimp into the salad dressing mixture followed with the chilled Chinese kale. Gently blend together then place in 6 serving dish. Serve immediately.



  • 10 stalks Chinese kale stalks with branch tips
  • 50 grams Shrimp meat, minced and scalded
  • 8-10 Medium-sized fresh shrimps peeled, deveined and scalded
  • 2 tablespoon Garlic, finely chopped
  • 1 tablespoon Bird chili, finely chopped
  • 3 tablespoon Fish sauce
  • 4 tablespoon Lemon juice
  • 2 tablespoon Brown sugar
