Preparation Method :

  • With a cloth, wipe out dirt from the mushrooms and trim off hard stalks.
  • Put into a pot and place over medium heat. Dry-fry until all are dried and heated through.
  • Remove from the heat. Diagonally slice eryngii mushrooms and cut straw mushrooms into quarters. Put all mushrooms into a mixing bowl.
  • Add light soy sauce into the bowl, followed by ground chili, salt and lime juice. Toss to mix well.
  • Add ground rice, shallot, and spring onion, saw leaves coriander and mint leaves, toss again.
  • The salad should have a combination of spicy, sour, salty and sweet.
  • Dip out into a serving dish and enjoy with fresh vegetables.


  • 10 eryngii mushrooms
  • 20 straw mushrooms
  • 25 small fresh shiitake mushrooms
  • 4 tablespoons light soy sauce
  • 4 teaspoons roasted dried hot chili, ground
  • 1 teaspoon sea salt
  • 3 tablespoons lime juice
  • 2 tablespoons ground roasted rice
  • 100 grams shallot thinly sliced
  • 2 spring onions, sliced
  • 2 saw-leaves corianders, sliced
  • 100 grams mint leaves 
  • Fresh vegetables: sweet basil leaves, mint, Chinese cabbage etc.
