SPICY SHRIMP WITH FRIED EGG SALAD

Preparation Method :

  • Fry the eggs in hot oil (set heat to medium) until golden yellow. Remove and drain oil then cut into bite-sized pieces.
  • Mix the lemon, fish sauce, brown sugar and bird chili together.
  • Add the scalded shrimp and mix together. Follow with the tomatoes and onion slices. Blend the contents together gently.
  • Add the fried eggs, carrots, celery and scallions. Mix together gently and place on a serving dish. Serve immediately.    

 

INGREDIENTS

  • 3 Chicken eggs   
  • 50 grams Minced shrimp, scalded    
  • 1 Tomato, sliced        
  • ½ bulb Large onion, vertically sliced    
  • 50 grams Carrots, slivered    
  • 1 -2 stems Celery, cut into pieces    
  • 1 -2 stems Scallions, cut into pieces    
  • 3 tablespoon Lemon juice    
  • 2 tablespoon Fish sauce    
  • 2-3 teaspoon Brown sugar    
  • 1 tablespoon Bird chili, finely chopped    
  • IDHAYAM Mantra Peanut oil for frying
