THAI CHICKEN SALAD

Serves :

Preparation Time :
30 minutes

Preparation Method :

  • Pour boiling water over the noodles and allow to stand for about 10 minutes or until softened. Drain and arrange on a serving platter.
  • Slice chicken breasts into thin shreds and place in a bowl with carrot and cucumber.
  • To Make Dressing: Place all ingredients in a food processor and process until well combined.
  • Pour over chicken, add mint and coriander and toss well to combine. Arrange on bed of noodles, scatter with peanuts and serve.

INGREDIENTS

  • 100 grams cellophane noodles
  • 1.5 kgs chicken breasts, poached
  • 1 carrot, grated
  • 1 cucumber, diced

Peanut Dressing

  • 100 ml fresh lime or lemon juice
  • 1 tablespoon sugar
  • 50 ml light soy sauce
  • 50 ml Cooking oil
  • 1 tablespoon fish sauce
  • 1 tablespoon ground peanuts or peanut butter
