THAI SQUID SALAD

Preparation Method :

  • Prepare the squid Peel off the outer skin of the squid and rinse out the insides of the tubes.
  • Cut each in half and open the pieces out. Score the inside of each squid with diagonal cuts to make a diamond pattern, and then cut them into squares.
  • Dry-fry the sesame seeds in a nonstick frying pan over a medium heat. Shake the pan to move the seeds around for 3 - 4 minutes or until they are lightly browned. Spoon into a small bowl.
  • Heat some water in a saucepan and bring to the boil. Add the squid, cook for 2 - 3 minutes, then drain.
  • Toss the squid, tomatoes, shallots, ginger, spring onions, chilies and garlic in the lime juice and fish sauce. Taste and adjust the seasoning.
  • Mix the coriander and salads leaves and pile them on to each serving plate.
  • Spoon the squid mixture over the mixed leaves and sprinkle with the sesame seeds.

INGREDIENTS

  • 250 grams Squid tubes
  • ½ tablespoon White sesame seeds
  • 3 Cherry tomatoes
  • 1 Shallots, finely sliced
  • Fresh root ginger, peeled, finely shredded
  • 1 Spring onions, finely sliced
  • 2 red chilies, finely chopped
  • 2 Garlic cloves, finely chopped
  • 2 tablespoons Lime Juice
  • 1 tablespoons Fish sauce

To serve

  • Coriander leaves
  • Mixed salad leaves
