Preparation Method :

  • Divide the cereal cream into 2 cups then add the fermented fish to one and dissolve that mixture over low a heat. Filter out all the fish bones and bring to the boil.
  • Add the bamboo shoots, lemongrass, finger roots, shallots and galangal, followed by the shrimps, eggplants and string beans. Wait until the contents are boiling then add the remaining cereal cream.
  • Season with fish sauce and bring to the boil one more time.
  • Add the cayenne pepper and kaffir lime leaves. Stir and remove from heat. Serve immediately.


  • 75 grams Fermented striped snake-head fish meat
  • 250 grams Medium-sized fresh shrimp, peeled and deveined
  • 600 grams Cereal cream Bamboo shoots, cut into bite-sized pieces
  • 50 grams Galangal, cut into shreds
  • 3-4 stems Lemongrass, slivered
  • 50 grams Finger roots, sliced
  • 50 grams Shallots, sliced
  • 400 grams Eggplant, cut into 4 pieces
  • 3-4 pods String beans, cut into pieces
  • 1 piece of each Green, red and yellow cayenne pepper, diagonally sliced    
  • 5 leaves Kaffir lime leaves
  • 2 tablespoon Fish sauce
