BITTER GOURD SOUP WITH PICKLED MUSTARD GREEN

Preparation Method :

  • Wash shiitake mushrooms and soak until tender. Remove and squeeze to dry.
  • Cut away hard stems. Fry in hot oil over medium heat until golden and fragrant. Put aside.
  • Wash bitter gourd and pat-dry. Fry the whole fruit in oil over high heat for a moment. Remove and soak in a bowl of clod water.
  • Cut across into sections about 2" long, then cut into quarters. Discard seeds and membrane, put aside.
  • Bring a pot of water to the boil over medium heat. Add garlic, coriander roots. Ginger, black peppercorn, shiitake mushrooms and pickled mustard green.
  • When the soup boils, reduce to low heat and simmer for 15 - 20 minutes until vegetables are tender.
  • Add in bitter gourd, canned pickled mustard green, straw mushrooms and bean curd skin. When the soup becomes boiling.
  • Season to taste with light soy sauce, seasoning sauce, palm sugar and salt.
  • Continue simmering for 1 hour or until the bitter gourd is cooked through and tender.
  • Add fried chilies, stir to combine. Turn off the heat.
  • Dip out into a serving bowl, hot. 

INGREDIENTS

  • 10 dried shiitake mushrooms, soaked until tender
  • 1 liter Cooking oil
  • 2 bitter gourd
  • 3 liters water
  • 30 cloves Thai garlic, peeled
  • 10 coriander roots, bruised
  • 4 slices (1"long) mature ginger
  • 2 teaspoons cracked black peppercorn
  • 300 grams pickled mustard green cut into2" pieces
  • 500 grams pickled mustard green
  • 10 straw mushrooms, halved
  • 100 grams dried bean curd skin, broken into pieces and friends
  • 100 grams light soy sauce 
  • 5 tablespoons seasoning sauce
  • 2 tablespoons palm sugar
  • 4 tablespoons sea salt
  • 10 dried red spur chilies, cut into 1" pieces and fried
