Preparation Method :

  • Remove the fish organs and thoroughly rinse. Set aside on a strainer to drain the water.
  • Place the sugar cane, ginger, crushed coriander roots in a pot or a deep pan, followed by the fresh mackerel.
  • Add water followed by tamarind juice, black soy sauce, brown sugar and salt. Boil over high heat and reduces heat once the contents reach boiling point.
  • Crush the coriander root, garlic and pepper together then stir-fry with oil until aromatic.
  • Place the contents into the pot and stir together. Season according to taste and simmer until the mixture marinates the fish meat. Place in a bowl and serve immediately.



  • 3 Medium-sized mackerel
  • 3 Fresh sticks of sugar cane, cut into 2 inch pieces and slightly crushed    
  • 6 slices Ripe ginger, sliced and slightly crushed    
  • 2 roots Coriander root, crushed    
  • 1 ½ tablespoon Tamarind juice
  • 1 ½ tablespoon Black soy sauce
  • 50 grams Palm sugar    
  • 1 tablespoon Ground salt    
  • 2 teaspoon Coriander root, coarsely chopped    
  • 1 tablespoon Garlic, coarsely chopped    
  • 1 teaspoon Whole pepper    
  • 1 tablespoon Sesame oil
  • 500 ml Water
