RICE NOODLES WITH VEGETARIAN BROWN SOUP

Preparation Method :

  • To prepare vegetarian liver and lung: bring a pot of water to the boil over high heat.
  • Add a pinch of salt and cook white tofu until done and floated to the surface.
  • Remove and put aside. Place a pan over medium heat and pour in water.
  • When It is hot, add fermented tofu, TVP, Sweet dark soy sauce, star anises, cinnamon, ground coriander seed, seasoning sauce, sugar and stir to mix well.
  • Add cooked tofu and lightly stir. Reduce to low heat and simmer until tofu is tender and the sauce reduces. Turn off the heat.
  • To prepare braised veggi meat: bring a pot of water to the boil over medium heat, cook TVP until done and tender.
  • Remove and wash under cold water. Squeeze to dry and put aside.
  • Place a pan over medium heat, add in fermented tofu, water, dark fermented soybean, sweet dark soy sauce and black pepper.
  • Stir to combine, add cooked TVP and turn the heat to low. Simmer until everything is tender and the sauce reduces.
  • Turn off the heat. Cut braised TVP into slices and put aside.
  • Place a new pot of water over high heat and bring to the boil.
  • Cook rice noodles, bean sprouts and water morning glory together in the hot boiling water until done.
  • Dip out into a serving bowl; arrange vegetarian meat over the noodles.
  • Sprinkle fried garlic on top and spoon generous amount of hot stock into stock into the bowl.
  • Add pepper, Chinese celery, saw-leaves coriander and spring onion.
  • Serve hot with seasonings.

INGREDIENTS

  • 1½ kg small brown rice noodles 
  • 75 grams skin-on Thai garlic, pounded and fried until crisp
  • 1½ liter vegetarian noodle stock
  • 1 tablespoon ground pepper
  • 250 grams Chinese celery, sliced
  • 75 grams saw-leaves coriander, sliced
  • Fresh bean sprouts and water morning glory
  • Seasonings: light soy sauce, sugar and minced spur chili in vinegar

Vegetarian pig liver and lung

  • 1 piece semi-hard white tofu, cut into triangular pieces
  • 250 ml water 
  • 3 tablespoons pounded yellow fermented tofu
  • 6 pieces large-sized textured vegetables protein (TVP), blanched and soaked until tender, squeezed and cut into pieces
  • 2 tablespoons sweet dark soy sauce
  • 3 star anises
  • 1 stick roasted cinnamon
  • 3 teaspoons roasted coriander seed, ground
  • 1 tablespoon seasoning sauce
  • 1 tablespoon unbleached sugar

Braised veggi meat

  • 8 pieces large-sized dark TVP
  • 10 cubes yellow fermented tofu, pounded
  • 150 ml water
  • 250 grams dark fermented soybean with its liquid
  • 1 tablespoon sweet dark soy sauce
  • 1 teaspoon ground black pepper
