TRADITIONAL RICE AND CHICKEN THAI SOUP

Preparation Time :
15 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Heat oil in a small pan, add garlic and fry till golden brown.
  • Add the stock to mince, rice, celery, spring onions in a separate clean pan and simmer for 10-12 minutes.
  • Add coriander leaves, fish sauce, salt, pepper, lemon juice and then fold in beaten eggs. Finally add in the fried garlic. Serve hot.

INGREDIENTS

  • 350 grams cooked rice
  • 250 grams minced chicken/mutton/pork
  • 900 ml chicken stock
  • 2 tablespoon Cooking oil
  • 8 - 10 cloves garlic chopped
  • 2 - 3 sticks celery sliced fine
  • 2 - 3 spring onions sliced
  • 1 tablespoon chopped fresh coriander
  • 4 teaspoon fish sauce
  • A pinch of pepper
  • Juice of 1 lemon
  • 1 egg slightly beaten
  • Salt to taste
