Preparation Method :

  • Clean wax gourd, peel and cut into halves. Discard seeds and membrane, cut into large pieces and put aside.
  • In a soup pot, combine water or stock with water reserved from soaked shiitake mushrooms.
  • Place the pot over medium heat and add in wax gourd, fried shiitake mushrooms, garlic, coriander roots and peppercorn.
  • Cook until boiling. Season with light soy sauce, seasoning sauce and sugar.
  • Continue cooking until the wax gourd is cooked through and the soup is should be sour and salty.
  • Ladle into a serving bowl, sprinkle pepper over and garnish with sliced spring onion and coriander.
  • Serve hot. 


  • 2 kg wax gourd
  • 3 liters water or vegetable stock
  • 500 ml water reserved from soaked shiitake mushrooms
  • 8 dried shiitake mushrooms (about 2" in diameter), soaked until tender and fried
  • 2 tablespoons Thai garlic, lightly crushed
  • 5 coriander roots
  • 1 teaspoon black peppercorn, cracked 
  • 4 tablespoons light soy sauce
  • 2 tablespoons seasoning sauce
  • 4 teaspoons brown sugar
  • 5 tablespoons liquid reserved from pickled lime 
  • 2 pickled lime
  • 2 spring onions, sliced
  • 2 corianders, sliced pepper
