Preparation Method :

  • To prepare cucumber relish: combine vinegar, sugar and salt together and cook over low heat until slightly thickened.
  • Remove from the heat and allow to cool .pour into a sauce bowl, add cucumber, spur chilies, ground peanuts and coriander leaves just before serving
  • Discard outer tough leaves of banana blossom until the white heart remains.
  • Cut into thin wedges and immediately soak in a bowl of clear lime liquid.
  • Soak for 30 minutes, remove and drain.
  • To prepare the batter: in a mixing bowl, combine all purpose flour and rice flour together.
  • Gradually add coconut cream, stir until no lumps remain.
  • Add slake lime, egg yolk, salt red curry paste and kaffir lime leaves and stir to obtain the thick batter.
  • Place a frying pan with oil over medium heat and leave until the oil is hot.
  • Dip banana blossom in the batter and deep-fry in hot oil until golden crispy. Remove and drain. Continue until finished.
  • Arrange on a serving platter and serve immediately with cucumber relish.


  • 2 large banana blossom 
  • 1½ liters clear lime liquid 
  • 1 liter Cooking oil

The Batter

  • 4 tablespoons all purpose flour
  • 200 grams rice flour
  • 300 grams coconut cream
  • 1 teaspoon slake lime
  • 2 duck's egg yolk
  • 1 teaspoons sea salt
  • 4 tablespoons red curry paste
  • 2 tablespoon shredded kaffir lime leaves

Cucumber relish

  • 200 ml vinegar
  • 200 grams sugar
  • 1 teaspoon sea salt
  • 200 grams cucumber, thinly sliced
  • 4 red spur chilies cut into rings
  • 4 tablespoons ground roasted peanuts
  • 2 corianders, leaves only
