THAI FISH CAKES

30 minutes

Preparation Method :

  • Mix, together the minced fish, curry paste, flour, sea salt, green beans, kaffir lime leaves and egg in a bowl.
  • Heat a little oil in a nonstick frying pan. Using your wet hands or a spoon, shape the fish mixture into 15 small, thin, flat cakes, 1 inch across, and gently pan-fry in batches for 4 - 5 minutes each side. Drain on kitchen paper.
  • Add a little oil to the pan for each batch.
  • Serve hot or warm with Sweet Chili Sauce.

INGREDIENTS

  • 250 grams fish fillets skinless, minced
  • ½ tablespoon Red Curry Paste
  • 1 tablespoon self - raising flour
  • ½ teaspoon Sea salt
  • 25 grams Green beans, finely sliced
  • 2 Kaffir lime leaves, finely shredded
  • 1 Egg, lightly beaten
  • Cooking oil, for pan-frying
