RICE CRACKERS WITH MINCED TOFU DIP

Preparation Method :

  • Preheat the oil in a pan over medium heat. Add small amount of rice crackers at a time, deep fry until golden on both sides. Remove and drain.
  • In a mortar, pound garlic, coriander root, pepper and dried spur chili to a fine mixture.
  • Boil coconut cream in another pan over medium heat until boiling and oil surfaces.
  • Put in the garlic mixture and cook until fragrant add tofu, carrot and straw mushrooms.
  • When everything is done, season to taste with sugar, light soy sauce and salt. Stir to combine well.
  • When it boils again, taste and adjust to your liking. The dip should have a perfect balance of sweet and salty.
  • Add ground peanut and shallot, stir to mix well. Turn off the heat.
  • Dip out into a serving dish and garnish with coriander and spur chili strips.
  • Serve with crisp-fried rice crackers.

INGREDIENTS

  • 500 ml Cooking oil
  • 200 grams rice crackers
  • 2 tablespoon garlics, sliced
  • 2 teaspoon coriander roots, finely sliced
  • 1 teaspoon pepper
  • 2 dried red spur chilis
  • 300 grams coconut cream
  • 200 grams semi-hard white tofu, Minced
  • 100 grams carrots, chopped
  • 100 grams straw mushrooms, chopped
  • 5 tablespoons sugar
  • 5 tablespoons light soy sauce
  • 1 teaspoon sea salt
  • 100 grams ground roasted peanut
  • 4 tablespoons shallot, sliced
  • Coriander and red chili strips for garnish
