IRISH STEW

Cooking Time :
2 hours

Preparation Method :

  • Make layers of meat, vegetables, herbs and salt and pepper in a deep casserole, ending with a top layer of potato to make a neat 'lid'.
  • Pour in 300 ml water and cover with greaseproof paper or foil and then the casserole lid.
  • Bake at 170°C (325°F) mark 3 for about 2 hours or until the meat and vegetables are tender.
  • Serve hot, garnished with parsley.

INGREDIENTS

  • 700 grams middle neck of lamb, cut into cutlets and trimmed
  • 2 medium onions, skinned and sliced
  • 450 grams old potatoes, thinly sliced
  • 15 ml chopped fresh parsley
  • 5 ml dried thyme
  • Salt and pepper
  • Chopped fresh parsley, to garnish
