Preparation Method :

  • Melt the butter in a large saucepan and gently fry the onions and garlic for 5 minutes, until soft.
  • Add the marrow and cook for a further 5 minutes.
  • Stir in remaining ingredients, cover and simmer for 30 minutes, until the vegetables are tender.
  • Season to taste. Serve at once.


  • 25 grams butter
  • 2 medium onions, skinned and chopped
  • 1 garlic clove, skinned and crushed
  • 1 medium marrow, peeled, seeded and cubed
  • 6 large tomatoes, skinned and chopped
  • 30 ml tomato puree
  • 30 ml chopped fresh mixed herbs or 10 ml dried mixed herbs 
  • Salt and pepper
