Preparation Method :

  • Combine mayonnaise, curry powder, vinegar, chutney, lemon juice, salt, and pepper and mix well.
  • Now add the chopped chicken breast, onion, celery, and raisins.
  • Stir until everything is well-coated.
  • Refrigerate overnight for development of flavour.
  • While serving, place on a bed of watercress and garnish with chopped cashews.


  • 2 chicken breasts, boneless and skinless, poached and diced
  • 60 gram mayonnaise
  • ½ tablespoon curry powder
  • 1 tablespoons mango chutney or apricot preserves
  • ½ yellow onion, diced
  • ½ stalk celery, diced
  • 20 gram cup raisins
  • ½ tablespoon vinegar
  • ½ lemon juice
  • 20 grams chopped cashews
  • Watercress, washed and de-stemmed
  • Salt and pepper to taste
