ICED TOMATO AND BASIL SOUP

Serves :

Preparation Time :
20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Blend the chopped tomatoes, the chopped onion, the tomato puree and the chopped fresh basil leaves in a food processor.
  • Filter the blended puree onto a saucepan.
  • Mix the chicken stock gently and heat on low flame.
  • Remove the froth formed on the surface of the soup on boiling.
  • Season with salt and pepper to taste.
  • Allow it to cool.
  • Garnish with cream on top and serve.

INGREDIENTS

  • 300 grams of tomatoes, chopped
  • 1 small-sized onion, skinned and chopped
  • 10 ml  of tomato puree
  • 10 ml of chopped fresh basil leaves
  • 350 ml  of chicken stock
  • Salt and pepper to taste
  • 10 ml of double cream
