Preparation Method :

  • In a large saucepan, melt the butter and add the bacon, the onion, the carrot and the celery and cook until it softens.
  • Add the peas and stock and bring to the boil, then cover and simmer for 1 hour, until the peas are soft.
  • Allow to cool and blend in a blender or food processor until smooth.
  • Now, to the pan, add the blended soup, salt and pepper and mix well.
  • Add the yogurt and simmer till the soup is hot.
  • Garnish with chopped grilled bacon and croutons and serve hot.

INGREDIENTS

  • 10 grams butter
  • 25 grams streaky bacon rashers, rinded and chopped
  • 1 small - sized onion, skinned and roughly chopped
  • 1 small- sized carrot, diced
  • ½ celery stick, chopped
  • 250 grams of split dried peas
  • 1½ litres of ham stock
  • Salt and pepper to taste
  • 2 tablespoons of natural yogurt
  • Chopped grilled bacon and croutons for garnishment
