Preparation Method :

  • Mix the flour and salt into a bowl.
  • Stir in the butter until the mixture is like fine breadcrumbs.
  • Add then add water gradually and form the mixture into a ball.
  • Put it on a lightly floured board, roll it out and use it to line 4 quiche rings or flan dishes which are 11 cm each.
  • Cook the onion rings in the oil in a pan until they soften.
  • Beat the eggs and add the milk, salt and pepper and cheese.
  • Divide the onions between the 4 quiches.
  • Pour over the egg mixture. Bake in a moderately hot oven for half an hour.



  • 500 grams plain flour
  • 200 grams butter
  • 4 tablespoons water
  • Pinch of salt


  • 200 grams Cheddar cheese, grated
  • 4 eggs
  • 300 ml milk
  • 4 onions, sliced into rings
  • 4 tablespoons Cooking oil
  • Salt and pepper
  • Coriander and onion rings for garnishing
