Preparation Method :

  • Put the roe in a blender or food processor. Add the breadcrumbs, parsley, lemon juice, egg yolk, yogurt and mace.
  • Season to taste and work together until smooth. Turn into a bowl.
  • Whisk the egg white until stiff, and then fold into the mixture.
  • Spoon into 6 greased ramekin dishes.
  • Bake for 15-20 minutes, until well risen and golden brown.
  • Serve at once, accompanied with fingers of toast.


  • 150 grams smoked cod's roe, skinned
  • 25 grams fresh breadcrumbs
  • 10 ml chopped fresh parsley
  • 20 ml lemon juice
  • 1 egg, separated
  • 75 grams natural yogurt
  • Pinch of ground mace
  • Salt and pepper
