OYSTERS IN CHIVE SAUCE

Cooking Time :
15 minutes

Preparation Method :

  • Arrange the oysters on a bed of salt in a heatproof shallow dish.
  • Keep it in refrigerator until ready to cook.
  • To prepare the sauce, heat the butter in a pan.
  • Add the vinegar and boil it until the sauce becomes syrupy.
  • Stir in the lemon juice, oyster juices and chopped chives.
  • Divide this mixture between the oysters and put the dish under the grill for 2- 3 minutes.
  • Sprinkle some chopped parsley over the oysters.
  • Serve immediately. 

INGREDIENTS

  • 2 oysters on the half shell, juices reserved
  • 1 tablespoons fresh lemon juice
  • 30 grams unsalted butter
  • 2 tablespoon white wine vinegar
  • 250 gram rock salt
  • handful of chives and parsley, chopped
