MUSHROOM QUESADILLAS

Preparation Time :
10 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Sauté mushrooms and jalapenos in olive oil until tender and liquid are nearly evaporated.
  • Add cilantro and cook and stir for 1 minute.
  • Take it off from the heat.
  • Heat vegetable oil in a frying pan and add one tortilla.
  • Top with some cheese, mushroom mixture and another tortilla.
  • Cook for 3-5 minutes and then turn it and cook again until uniform brown colour appears on both the sides.
  • Repeat with remaining tortillas, cheese and mushroom mixture, adding more oil as needed.
  • Serve with salsa.

INGREDIENTS

  • 500 grams fresh mushrooms (chopped)
  • 3 jalapeno peppers (seeded and chopped)
  • 3 tablespoons olive oil
  • 15 grams minced fresh cilantro
  • 2 teaspoon Cooking oil
  • 10 flour tortillas (7 inches)
  • 250 grams shredded Monterey Jack cheese
  • Salsa and guacamole, optional
